آبنبات‌ها!

آبنبات‌ها به خصوص نوع شیرین آن‌ها از مخلوط غلیظ شکر، آب به همراه برخی افزودنی‌های طعم‌ دهنده و رنگ‌ دهنده تهیه می‌شودند. آبنبات‌ها دارای انواع متنوعی اعم از آب نبات چوبی، آب نبات شکلاتی، تافی، پاستیل، آدامس، نوعی شیرینی خمیر مانند به نام مارشمالو (marshmallows)، شیرین بیان ،آب نبات ترش، آب نبات شور ،آب نبات سخت و غیره است. آبنبات‌ها از نظر شیمیایی دو نوع هستند، آب‌نبات بلورین و آمورف. نوع بلورین آن سخت نیست. امّا بافت آن از ساختار قند تشکیل شده است که از طریق فرایند تبلور به دست آمده است که باعث می‌شود راحت نصف شود. فوج، کرم، و فوندانت نمونه‌هایی از آب‌نبات‌های بلورین هستند. آب‌نبات آمورف ساختار کریستالی آشفته دارد. آن‌ها معمولاً دارای غلظت‌های بالاتر قند هستندو بافت آن‌ها سخت و شکننده است. کارامل، سوهان مهره و تافی نمونه‌هایی از آب‌نبات‌های غیرمتبلور آمورف هستند.

مدت زمان مناسب برای نگهداری از آبنبات از دو هفته تا یک سال است و اگر در جای خنک و خشک نگهداری نشود زودتر فاسد خواهد شد.
